Context of Mark 7:15
13Making the word of God of no effect through your tradition, which ye have delivered: and many such like things ye do. 14And when he had called all the people to him, he said to them, Hearken to me each one of you, and understand: There is nothing from outside of a man, that entering into him can defile him: but the things which come out of him, those are they that defile the man. 16If any man hath ears to hear, let him hear. 17And when he had entered into the house from the people, his disciples asked him concerning the parable.

- Matthew Henry Concise Commentary · v. 14-23Verses 14-23 Our wicked thoughts and affections, words and actions, defile us, and these only. As a corrupt fountain sends forth corrupt streams, so does a corrupt heart send forth corrupt reasonings, corrupt appetites and passions, and all the wicked words and actions that come from them. A spiritual understanding of the law of God, and a sense of the evil of sin, will cause a man to seek for the grace of the Holy Spirit, to keep down the evil thoughts…Read the comment

It concerns moral distinctions about eating (rules about what is right or wrong to eat). Eating affects the system that processes food, but moral issues involve the heart. The heart is a metaphor for where a person makes moral decisions. How a person eats (with ceremonially clean or unclean hands)…Read the comment
