Leviticus 3:9-11
9The person must cut the tail off the animal. He must give the tail and all the fat from inside the body to the Lord.
10He must also give the kidneys and the best piece of the liver.
11The priest will burn them as food on the altar. They are a burnt offering to the Lord.
