Context of Mark 7:18
16[If anyone has ears to hear, let him hear.”] 17When Jesus had left the crowd and gone into the house, His disciples asked Him about the parable. And He said to them, “Are you, too, so foolish and lacking in understanding? Do you not understand that whatever goes into the man from outside cannot defile and dishonor him, 19since it does not enter his heart, but [only] his stomach, and [from there it] is eliminated?” (By this, He declared all foods ceremonially clean.) 20And He said, “Whatever comes from [the heart of] a man, that is what defiles and dishonors him.

- Matthew Henry Concise Commentary · v. 14-23Verses 14-23 Our wicked thoughts and affections, words and actions, defile us, and these only. As a corrupt fountain sends forth corrupt streams, so does a corrupt heart send forth corrupt reasonings, corrupt appetites and passions, and all the wicked words and actions that come from them. A spiritual understanding of the law of God, and a sense of the evil of sin, will cause a man to seek for the grace of the Holy Spirit, to keep down the evil thoughts…Read the comment

It concerns moral distinctions about eating (rules about what is right or wrong to eat). Eating affects the system that processes food, but moral issues involve the heart. The heart is a metaphor for where a person makes moral decisions. How a person eats (with ceremonially clean or unclean hands)…Read the comment
