Context of Leviticus 3:5
3From the peace offering he is to bring a food offering to the LORD: the fat that covers the entrails, all the fat that is on them, 4both kidneys with the fat on them near the loins, and the lobe of the liver, which he is to remove with the kidneys. Then Aaron’s sons are to burn it on the altar atop the burnt offering that is on the burning wood, as a food offering, a pleasing aroma to the LORD. 6If, however, one’s peace offering to the LORD is from the flock, he must present a male or female without blemish. 7If he is presenting a lamb for his offering, he must present it before the LORD.

- Adam Clarke Bible Commentary · v. 5Aaron's sons shall burn it - As the fat was deemed the most valuable part of the animal, it was offered in preference to all other parts; and the heathens probably borrowed this custom from the Jews, for they burnt the omentum or caul in honor of their gods.Read the comment

- Tyndale Open Study Notes · v. 5Leviticus 1:3–17 describes the burnt offering. It is more accurate to call it "the whole burnt offering." They offered it twice daily (see Numbers 28:4). God required atonement before fellowship with him. So, the text assumes the burnt offering was already on the altar. The priest would place the fatty portions and certain internal organs of the peace offering on top of it (Leviticus 3:3–4).Read the comment
